1 c. packed brown sugar
1 c. granulated sugar
2/3 cup (10.67 Tablespoons) butter or margarine, softened
3 eggs
2 - 1/3 c. all-purpose flour
1 can pumpkin, NOT pumpkin pie mix
1/2 c. water
1 T. pumpkin pie spice
2 tsp. baking soda
1 tsp. salt
1 cup mini semi-sweet chocolate chips

Directions:

Preheat over to 350º
Grease and flour three 8 - 1/2 x 4 -1/2 inch loaf pans (or 4 mini loaf pans; or muffin pans)
Cream sugars together
Add softened butter/margarine and eggs
Add flour, pumpkin, water, spice, baking soda, salt and mix well. (If desired can add chopped pecans or walnuts)
Fold in chocolate chips
Bake 40-45 min or until bread is done
Cool 10 minutes, then remove from pans to cool completely.

Have a left over bananna? Add it to the mix. Muffins bake faster, about 25 minutes. Freezes well. We like bread sliced and toasted. Can also prepare without the chocolate chips....can use "Craisons" for a different taste/texture.
