4 large potatoes

3 tablespoons vegetable oil
2 tablespoons butter
2 garlic cloves, chopped
4 scallions (green onions), chopped
1 pound sirloin, thinly sliced, 3 inches long
pepper
2 Tablespoons Worcestershire sauce
2 red peppers, thinly sliced
1 medium red onion, thinly sliced
2-3 tablespoons thyme (optional)
1 lime, cut into wedges
1/2 cup sour cream
1/4 to 1/2 cup milk
1 (10 ounce) package shredded sharp cheddar cheese

1. Cut the unpeeled potatoes into large chunks. Place the potatoes in a pot and cover with cold water. Cover the pot and bring to a boil over high heat. Uncover the pot, add salt to season and continue cooking the potatoes until they are fork-tender (about 15 minutes).
2. Place a small pot over low heat and add 1 tablespoon of oil, butter, garlic and scallions. Let the mixture melt together and infuse. Cook over low heat for 5 minutes. Turn off the heat and let stand.
3. Heat a large nonstick skillet over high heat. Season the steak with salt and pepper, then add 1 tablespoon oil to pan. Start browning the meat, when almost done add Worcestershire sauce.
4. Push meat off to one side of pan and add another tablespoon of oil, then add red pepper and onion. Season the veggies with salt and pepper and toss them until the edges sear, Stir meat and veggies together. Add thyme and cook another 2 minutes. Turn off heat and squeeze lime juice over meat and veggies.
5. Drain potatoes, add garlic and scallions to potatoes along with the sour cream. Mash potatoes, add milk to desired thickness. Then add cheese. Pile mashed potatoes in bowl and top with steak and veggies.
