2 lbs of ground beef
1 med onion chopped`
1 egg
1 cup crushed cheezit crackers`
1 small can of rotel tomatoes & green chili
1 pkg of onion soup mix
salt
pepper

Directions:
Directions:
Mix all ingredients very well in a large bowl,
Take mixture, put in Meatloat pan add ketchup to top.
bake at 350 for 1 hr. Halfway thru baking, pull out of oven to drain excess grease.

Love this meatloaf and I usually use 5 lbs of lean ground beef and make 2 as meatloaf sandwiches are a favorite for me to take to work.
