4 medium baked potatoes (I boil them)
2 slices bacon
1/2 C. chopped celery (I do 1/2 C. carrots instead)
1/2 C. thinly sliced green onions
1 1/2 C. milk
14 1/2 oz. chicken broth
1 C. light sour cream
1/2 C. shredded cheddar cheese
1 garlic clove, minced

Directions:
Directions:
Remove skin from baked potatoes. Coarsely mash potatoes.
Cook bacon until crisp, crumble and set aside.
Chop celery, slice green onions. Combine with chicken broth, milk, mashed potatoes, celery, onion and garlic in pan. Bring to a boil, reduce heat and simmer for 10 minutes. Stir in sour cream and bacon.
Serve with shredded cheese over top of each serving.
