1 1/2 lbs. fish fillets, fresh or frozen, thawed (Select any lean fish such as Sole, Whiting or Orange Roughy)
1/2 cup mayonnaise
3 tbsp. grated Parmesan cheese
2 tbsp. Dijon-style mustard
fresh ground pepper
chopped fresh parsley

Directions:

Rinse fish and pat dry, Line cookie sheet or baking pan with foil for easy cleanup.

Combine mayonnaise, Parmesan cheese, mustard and pepper.

Spread mixture over top of fish.

Broil about 5 inches from source of heat for 4 to 8 minutes or until fish flakes when probed with a fork.

Sprinkle with parsley, Serve immediately.
