6 potatoes cut into 2 inch chunks
1/4 cup vegetable oil
1 tablespoon cajun spice (see below)
1 1/2 teaspoons dried oregano
1 1/2 teaspoons salt
1/2 teaspoon black pepper

CAJUN SPICE: (Use commercial mix or make your own)
1/2 cup paprika
1/4 cup black pepper
1 1/2 tablespoons cayenne pepper
2 teaspoons garlic powder
2 tablespoons onion powder

Directions:
Directions:
Preheat oven to 375º. Oil a baking dish.

Toss potatoes with oil and spices in large bowl. Transfer potatoes to well oiled baking dish and bake for 45 minutes, stirring occasionally.
