BREAD PUDDING:
White bread
2-3 cups milk
3-4 eggs
1 cup sugar
Pinch salt
1/4 teaspoon nutmeg

SAUCE:
3 cups milk
3/4 to 1 cup sugar
1/4 teaspoon salt
1 to 2 tablespoons flour or cornstarch
1 teaspoon vanilla extract (or to taste)
1/2 teaspoon lemon extract (or to taste)

BREAD PUDDING:
Preheat oven to 325º. Butter a 2 quart casserole.

Toast and butter enough white bread to fill a 2 quart casserole. Cup up toasted bread into small squares. Mix remaining ingredients together and pour over bread. Bake in a pan of hot water until mixtures does not adhere to a knife, 30-40 minutes.

SAUCE:
Combine milk and sugar. Cook until milk is scalded. Mix flour or cornstarch with a little water, stir into milk mixture, and cook, stirring occasionally, until mixture thickens. Remove from heat and stir in vanilla and lemon extracts.
