3/4 cup sugar
1/4 cup vegetable oil
2 eggs
3/4 cup canned or fresh cooked pumpkin
1/4 cup water
1-1/2 cups flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon cloves
1/2 teaspoon cinnamon
1/2 teaspoon salt

Directions:

Preheat oven to 400º. Grease 8 large or 12 small muffin tins.

Combine the sugar and oil in a large bowl. Add the eggs and beat well. Blend in the pumpkin and water. Combine the dry ingredients and add to the creamed mixture. Mix only until all ingredients are just moistened. Pour the batter into the prepared muffin tins. Bake for 20-25 minutes.

Recipe doubles easily.
