5 tbsp butter, divided
1/4 cup all purpose flour
1/4 tsp salt
1/4 tsp fresh ground pepper
1 dash nutmeg
1 cup half and half
4 oz cream cheese
1 small onion, minced
1/4 cup water, if needed
2-10oz pkg chopped spinach, thawed and drained
1/4 cup grated Parmesan cheese

In 2qt saucepan over med-low heat, melt 3 tbsp butter. Stir in flour, salt, pepper, and nutmeg. Slowly whisk in half and half, Stir in cheese. Increase heat to med. Whisk constantly until mixture is thick and smooth. Remove from heat and set aside. In a skillet over med-high heat, saute' onions in remaining 2 tbsp butter until translucent. Stir in spinach and water (if needed). Cover and reduce heat to med-low. Simmer, stirring occasionally for 8 mins. Stir spinach mixture into flour mixture. Return to med heat, stirring often, until warm throughout. Remove from heat and stir in Parmesan cheese.
