1/3 cup vegetable shortening
1/2 cup sugar
2 eggs
1-3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup (2 medium) mashed ripe bananas
1/2 cup chopped walnuts or pecans

Directions:

Place shortening and sugar in mixer bowl. Blend for 2 to 3 minutes. Add eggs. Mix thoroughly. Stop and scrape bowl, continue mixing for 2 to 3 minutes.

Combine flour, baking powder, baking soda, and salt in separate bowl. Add half of flour mixture and half of mashed banana to mixer bowl. Mix about 2 minutes. Add remaining flour and banana. Continuing to stir, mix another couple of minutes. Stop and scrape bowl. Add walnuts or pecans. Stir by hand or on low speed for 1 minute.

Pour mixture into greased and floured 9x5x3-inch baking pan. Bake at 350°F for 40 to 45 minutes. Cool 5 minutes in pan. Remove from pan and cool completely on wire rack.
