1 Package Boneless Chicken
2-3 Eggs, Beaten Well
1 Package Crackers, Ground Fine
2-3 Tablespoons Butter

Directions:
Directions:
Cut chicken into chunks (about 2x3-inch). Place chicken, one piece at a time between 2 pieces of waxed paper and pound with the bottom of a glass until about 1/4-inch thick.

Place crused crackers and eggs into 2 separate bowls. Dip pounded chicken pieces into egg and then into crackers. Make sure chicken pieces are covered well with crackers.

Lay chicken on cookie sheet and place in refrigerator for about 15-20 minutes to set crust.

Fry chicken in hot oil and butter until done. Good when served with spicy ketchup.
