4 chicken breast halves, skinned and boned
Salt
Pepper
1 egg, beaten
¼ cup milk or water
1 clove garlic, minced
½ cup Parmesan cheese
½ cup Italian bread crumbs
Spaghetti sauce (Ragu, yellow label with mushrooms or favorite)
1 cup mozzarella cheese, shredded
½ - 1 cup Parmesan cheese

Pound chicken breasts between plastic wrap until thin. Salt and pepper chicken. Mix egg, milk and dash minced garlic. Dip chicken in milk and egg mixture. Mix Parmesan cheese and bread crumbs and roll chicken in Parmesan cheese and bread crumb mixture. Brown chicken in olive oil. (To reduce calories cover and bake chicken at 350º for 20 - 30 minutes.) Place thin coating of spaghetti sauce in bottom of 9X13-pan or dish. Place chicken in baking dish and cover with spaghetti sauce. Bake, covered, at 350º for 30 minutes. Uncover, add mozzarella and Parmesan cheese and bake for 8 -10 minutes or until browned.
