3 c. hot mashed potatoes
2 eggs
1 tsp. salt
1 tsp. baking powder
1 c. bread crumbs, toasted & buttered
Dash of pepper
1/4 lb. butter

Directions:
Directions:
Beat the bread crumbs into the potatoes. Season and moisten with the yolks of the eggs. Whip the egg whites until stiff and fold into the mixture. Add just enough flour to make the dough hold together. Form into balls the size of a very large walnut. (When they cook, they will be twice as large.) Drop into boiling salted water and boil 15 minutes. Melt the butter and add a few bread crumbs and brown. Pour the butter mixture over the dumplings and serve hot.
