¼ cup butter
1 onion, chopped
1 clove garlic, pressed
½ cup chopped celery
¼ cup flour
3 cups chicken broth, warmed
8 oz. white mushrooms, chopped
8 oz. Brie cheese, peeled and cut up
Salt, pepper and cayenne to taste
½ cup heavy cream
Chopped parsley and lemon zest for garnish

Melt butter in a large sauce pan on medium heat. Add onion, garlic and celery and sauté until tender, about 5 minutes. Mix in flour and stir constantly for 2 minutes. Add warm broth and bring to a boil. Stir in mushrooms, brie, salt, pepper and cayenne. Cover and cook 10 minutes, stirring occasionally. Lower heat as necessary. Puree soup until smooth with a hand held blender. Stir in heavy cream and heat. Serve garnished with parsley and lemon zest
