5 c. cubed day-old bread
4 links Italian turkey sausage, casings removed, browned and crumbled
1/4 c. shopped sun-dried tomatoes, packed in oil, oil reserved
1/2 c. chopped onion
1-2 T. chopped fresh rosemary
4-6 oz. monterey jack cheese, shredded
6 large eggs
1 1/2 c. milk
1 t. salt
1/4 t. freshly ground pepper
1 t. dry mustard
1/4 t. ground nutmeg

Directions:
Directions:
Spray 9 inch square baking dish with non-stick cooking spray. Sprinkle bread cubes in dish. Sprinkle sausage evenly over bread cubes.

Pour 1 T. reserved oil into skillet. Add onions and saute. Add tomatoes and rosemary, stirring till blended.

Place onion mixture over sausage. Cover with cheese.

Whisk eggs, milk, salt, pepper, mustard and nutmeg in a medium bowl until well blended.
Pour egg mixture over casserole. Cover. Refrigerate 8-10 hours or overnight. Bring to room temp. before baking.

Preheat oven to 350º. Bake 30-45 minutes or till set.
