2 tablespoons vegetable oil
2 large onions, chopped
32 ounces chicken stock
4 chicken breasts
1 teaspoon cumin (optional)
8 ounces salsa (mild to medium)
48 ounces (1 large jar) nothern white beans

Directions:
Directions:
Heat oil in large stock pot. Cook onions until soft. Add chicken stock, cumin and chicken breasts. Add additional water or chickent stock to cover breasts. Cook 45 minutes to 1 hour or until meat pulls apart. Remove chicken from pan and shred. Return to pan and add salsa and beans (with liquid). Cook for an additional 2 hours to blend flavors.
