4 lbs. unpeeled baking potatoes, cut into 1” pieces
6 large cloves garlic, peeled
1/2 c. sour cream
1/2 c. milk, warmed
2 tbsp. butter
2 tbsp. finely chopped fresh rosemary (or 1 tsp. dried rosemary)
2 tbsp. finely chopped fresh thyme (or ˝ tsp. dried thyme leaves)
2 tbsp. finely chopped fresh or dried parsley

Place potatoes and garlic cloves in a medium saucepan; cover with water. Bring to a boil. Reduce heat and simmer, covered, about 15 minutes or until potatoes are fork–tender. Drain well. Place potatoes and garlic in a large bowl. Beat with an electric mixer just until mashed. Beat in sour cream, milk, and butter until almost smooth. Mix in rosemary, thyme, and parsley.
