1 1/2 C. potatoes, peeled and cubed
1 C. chicken broth
1/2 small carrot, grated
1/2 C. onion, chopped
1/2 Tbsp. parsley (dried)
1/4 tsp. celery seed
1/4 tsp. salt
1/4 tsp. pepper
3 slices bacon, cooked and crumbled
1 1/2 Tbsp. flour
1 1/2 C. milk
4 oz. processed American cheese (Velveeta cheese), cubed

Directions:
Directions:
In a pot combine potatoes, broth, carrot, onion, parsley, celery seed, salt, pepper and bacon. Cover and simmer until potatoes are tender, about 15-20 minutes.
Combine flour and milk together, until smooth. Slowly stir flour mixture into the soup, bring to a boil and stir constantly for 2 minutes.
Add the cheese and stir until cheese is melted and combined into the soup.
Serve with sour cream and crackers.
