4 medium zucchin sliced into 1/2 thick slices
6 T butter
3/4 c. shredded carrots
1/2 c. chopped onion
2 1/4 c. herbed stuffing cubes
1 can cream of chicken soup
1/2 c. sour cream

Directions:
Directions:
Cook zucchini until tender/crisp & then drain. In saucepan melt 4 T. butter. Add carrots & onion and saute until tender. Remove from heat, stir in
1 1/2 c. stuffing, soup & sour cream. Gently stir in zucchini. Spoon into casserole dish. Melt remaing butter & add rest of stuffing, toss gently together & sprinkle on casserole. Bake at 350 degrees for 30-40 minutes.

I just located this recipe in my old time files & recently mom made this & we all loved it. It apparently is an oldy but a goodie.
