French Onion Soup Recipe

1/4 c. butter
5 med. onions, thinly sliced
1/8 t. sugar
2 T. flour
5 c. beef broth
1/8 t. thyme
1/2 t. black pepper
8 1/2 inch slices French bread
1 c. grated swiss or provolone cheese
1/4 c. grated parmesan cheese

Melt butter in large saucepan over medium heat. Add onions. Cook 10 to 15 minutes, until onions are golden brown. Stir in sugar and flour. Cook an additional 3 minutes, stirring constantly. Add beef broth, thyme, and pepper. Bring to boil over medium-high heat, stirring frequently. Boil for 6 minutes. Reduce heat. Simmer, loosely covered, for 30 minutes. Ladle into 4 oven-proof bowls. Top each bowl with two French bread slices. Sprinkle with cheese. Broil close to heat source for two minutes or until cheese is bubbly.
