2 C leftover tossed salad
salt, pepper
1 1/2 C fresh tomatoes
1 packet Knox gelatin
Optional: Juice of half a lemon

Directions:
Directions:
Save two cups of leftover tossed salad.
Peel and chop enough fresh tomatoes to measure a cup and a half and bring to a boil.
Add one packet Knox gelatin and stir until dissolved. Cool in fridge for about an hour.
Chop leftover salad into small pieces (about 1/2 C firmly pressed into measuring cup) and add to gelatin mixture with salt and pepper to taste.
(Optional: Juice of half a lemon) and put back in fridge for an hour or two.
