Ingredients:  
1 lb. carrots
1 medium onion, chopped
6 oz. butter
1 sleeve Ritz crackers
6 oz. cheddar cheese, shredded

Directions:
Directions:
Cook carrots in boiling water until tender and drain. Smash by hand. Saute' onion in butter until lightly browned, add to smashed carrots. Stir in cheese and crackers. Bake at 350º for 1/2 hour.
