2 c. prawns, (washed, peeled, and deveined)
3 T. fish sauce or soy sauce, dilluted
6 T. lime juice
4 T. chili jam or chili oil
1/2 c. lemon grass, thinly sliced
6 shallots, thinly sliced
20 sm. chilies, finely chopped
1/2 c. coriander leaves, chopped
4 green onions, chopped
zest from 8 limes

Directions:

Method of preparation: Boil prawns until pink in color or about 1 minute. Set aside to cool. Put fish sauce, (dilluted soy sauce), chili jam or chili oil into a bowl and mix together well. Add prawns. May add water to mixture if too thick. In a seperate bowl, mix lemon grass, shallots, small chilis, coriander leaves, mint leaves and green onions. Add to prawn mixture. Stir and serve with a garnish of lime peel.
