6 Roma tomatoes, chopped
½ cup kalamata olives, chopped or ½ cup capers
½ cup chopped basil
2 tablespoon chopped parsley
2 tablespoons chopped oregano
½ cup of red onion, chopped
3/4 cup of olive oil
¼ cup freshly grate Parmesan cheese
2 tablespoons of roasted garlic
1 Italian bread loaf, cut into 1 inch slices
sea salt to taste

1.Preheat oven to 400 degrees. 2.Combine tomatoes, onion, olives (or capers), oregano, basil, parsley, and olive oil in a bowl. 3.Salt to taste .Place Italian bread on baking sheet. 5. Mix 1/4 cup of olive oil with 1 tablespoon of roasted garlic. 6. Lightly brush bread with olive oil and garlic and top with tomato mixture.
7. Sprinkle with Parmesan. 8.Bake in preheated oven for 8 to 10 minutes or until bread is browned
9. Allow bread to cool before serving.
