1/4 C. melted butter
3 T. flour
1 C. sugar
3 slightly beaten egg yolks
Jiuce and rind of 1 lemon
2 C. milk
3 stiffly beaten egg whites
1 unbaked deep dish 9" pie shell or 10" regular unbaked pie
shell

Directions:
Directions:
Preheat over to 450º. Blend the melted butter, flour, and sugar
in large bowl. Add the egg yolks and juice and rind and milk.
Fold in the stiffly beaten egg whites. Pour into unbaked pie shell.
Put into hot oven, but immediately reduce to 325º and bake for 45
minutes.
