Lemon Sponge Pie Recipe

1/4 C. melted butter
3 T. flour
1 C. sugar
3 slightly beaten egg yolks
Jiuce and rind of 1 lemon
2 C. milk
3 stiffly beaten egg whites
1 unbaked deep dish 9" pie shell or 10" regular unbaked pie

Preheat over to 450. Blend the melted butter, flour, and sugar
in large bowl. Add the egg yolks and juice and rind and milk.
Fold in the stiffly beaten egg whites. Pour into unbaked pie shell.
Put into hot oven, but immediately reduce to 325 and bake for 45
