4 organic russet potatoes, sliced 1/4 inch thin
1 Large yellow organic onion, sliced
4 sprigs of rosemary, stripped from stem and whole
3 tablespoons olive oil
¼ cup vegetable broth
sea salt and pepper to taste

Directions:
Directions:
1. Heat olive oil in large skillet. 2. Add onions and rosemary. 3. Sauté for 5 minutes. 4. Place potatos in microwave safe bowl and toss with 1 tablespoon of olive oil and cook for 5 minutes. 4. Add potatos to onions. 5. Add 1/4 cup of vegetable broth and bring to boil. 6.Turn down heat and simmer until liquid is absorbed.
