¼ cup olive oil
1box of Melba toast ground in food processor
3eggs
1 tablespoon Dijon Mustard
1 tablespoon soul seasoning
1 tsp of coarse ground black pepper
6 boneless free range chicken breasts (May use chicken leg quarters or any other parts of chicken)

Directions:
1.Preheat oven to 400 degrees. 2. Line sheet pan with foil and place flat wire rack over sheet pain. Spray with cooking spray. 3.Mix eggs, Dijon mustard, soul seasoning, and pepper with a whisk in a bowl. 4.Working one piece at a time coat chicken on both sides with egg mixture. 5. Press Melba toast crumbs on both sides of chicken.
6. Bake until chicken is brown about 40 minutes.
