2 pounds of organic sweet potatoes
2 tablespoons of butter
2 teaspoons pure vanilla extract
2 teaspoons of shredded ginger
1 Table spoon Grade B maple syrup
¼ cup of half and half
¼ teaspoon of sea salt

Directions:
Directions:
1. Preheat oven to 425 degrees. Pierce potatoes with knife or fork several times to vent. 2.. Bake Potatoes for 30-35 minutes until tender. 3. Let stand until cool enough to handle. 4.Remove the skin from the potatoes. 5.Add potatoes and remaining ingredients in large bowl. 6.Mash with hand mixer until smooth and well blended.

Optional: You can also peel and cut potatoes into 2 inch chunks and boil for 20-30 minutes. Microwave for 10 minutes This is great with maple glazed ribs and broccoli slaw.
