1 Pillsbury Frozen 9" Pie Crust Dough
1/3 lb. Gruyere Swiss Cheese
3 large eggs
1 c. buttermilk
1/2 lb. frozen chopped spinach
1/2 stick of butter
Medium onion
Dry mustard
Nutmeg

Directions:
Thaw out frozen pie crust dough and line a quiche pan or large, deep pie pan with it. Do not poke any holes in the pie dough. If any dough protrudes over the edge of the pan, trim it off.

Grate cheese and deposit it directly onto the crust. Make sure the cheese is spread out evenly on the bottom of the pie dough. Set aside.

Chop the onion fine and saute it on butter in a frying pan till limp and translucent. Do not brown the onion. Microwave a 1/2 lb. package of frozen chopped spinach according to package directions and then add to sautéed onion. Then saute the spinach with the onion. Add dry mustard, ground nutmeg, salt, and ground black pepper to taste. Layer the spinach mixture evenly on top of the cheese.

Beat together 3 eggs and 1 cup of buttermilk. Pour this over the spinach mixture in the quiche/pie pan. Dust the top of the quiche with paprika and bake in a 375º pre-heated oven for 35-40 minutes or until firm.

Cool for at least 15-20 minutes before slicing. You can serve quiche at any temperature.

Serve quiche with a nice soup or salad. This Quiche recipe is a great meal for Ash Wednesday or on the Fridays of Holy Lent.
