20 fresh Cremini Mushrooms
1 3.5 oz. chorizo sausage, finely diced
1/2 red onion, finely chopped
3 garlic cloves, minced
1/4 tsp. dried thyme
1 Golden Delicious apple, peeled and finely chopped
1 egg white, lightly beaten
1/4 c. bread crumbs
1/3 tsp. freshly ground pepper

Preheat oven to 350º. Spray a large rimmed baking sheet with non-stick spray.
Remove stems from mushrooms and chop finely, set aside. Put the caps, stem sides up on the baking sheet. Heat a non-stick skillet over medium high heat and cook chorizo until lightly browned. Add mushroom stems, onion, garlic and thyme. Cook about 7 minutes or until browned. Add apple and cook until it is softened (about 3 minutes). Let mixture cool slightly. Add egg white and mix thoroughly.
Stuff each mushroom cap. Bake until browned and sizzling about 25 minutes. Serve warm.
