1 med. onion, chopped
1 lb. seasoned sausage, browned
8 med. potatoes, peeled & cubed
4 c. chicken broth
1 Tbsp. parsley
3/4 tsp. salt
1 tsp. pepper
6 Tbsp. butter
6 Tbsp. flour
5 c. milk, warmed
2 c. Swiss cheese

Directions:
Directions:
In a large stockpot, combine potatoes, onion, pepper, sausage, parsley, salt & pepper in broth. Bring to boil - reduce heat, simmer.
Meanwhile, in medium saucepan, melt butter. Slowly add flour, stirring constantly, to form the roux.
Stir in warmed milk slowly - increase heat. Bring to boil & thicken.
Pour roux into soup. Add cheese & stir well.

Bacon or ham may be used as a substitute for sausage if desired. Also very good with pork sausage. A favorite!
