1/2 C finely chopped onions
2 10 oz pkgs spinach, thawed and squuzed dry
1 8 oz pkg fat free cream cheese
1 8 oz carton light sour cream
3/4 C Parmesan cheese
1 14 oz can artichoke hearts
Crushed red pepper flakes, to taste
Black pepper and salt to taste
1 C reduced fat Jack cheese, shredded

Directions:
Directions:
Lightly coat skillet with nonstick cooking spray. Cook and stir onion over med heat until transparen (about 5 mins). Add spinach. Cook 1-2 mind. Reduce heat. Add cream cheese. Stir until melted and smooth. Stir in sour cream, parmesan cheese and artichokes. Remove from heat. Add salt and pepper (s). Put in microwave bowl. Top with cheese and heat ntil cheese melts. Serve with crackers or chips of choice.
