2 medium apples
1/2 cup butter
1 cup sugar
2 eggs
1 Tablespoon lemon juice
2 teaspoons vanilla
2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt

Combine Strudel Mixture in a separate bowl:
2 Tablespoons flour
2 Tablespoons sugar
1 Tablespoon butter, melted
1 teaspoon cinnamon

Directions:

Preheat oven to 350º. Chop apples and set aside. Cream butter and sugar; stir in eggs, lemon juice, vanilla. Combine flour, soda and salt and add to the butter mixture. Mix just until moist. Gently fold in apples. Spoon 1/2 the batter into a lightly greased bread pan. Sprinkle with 1/2 the strudel mixture. Add the remaining batter, and sprinkle with the remaining strudel mixture, pressing lightly into batter. Bake 55 - 60 minutes. Cool 10 minutes, then dump out.
