Ingredients: 1 lb. Farmer's Cheese 3 large eggs, separated 1 box regular lemon Jell-O 1 1/2 C powdered sugar 2 sticks sweet butter 1 box red Jell-O (any Flavor) 1 Graham Cracker Crust (Use recipe on the Graham Cracker Crumb box)
Fresh fruit for topping (blueberries, strawberries, raspberries, etc.).

Directions:In mixer bowl, beat butter until smooth. Separate eggs, adding one egg yolk at a time to butter and alternating with the powdered sugar. (Reserve the egg whites in a very clean medium bowl, set aside and chill.) Mix in the cheese.
Dissolve the lemon Jell-O in 1/2 cup boiling water. When lukewarm, add to the cheese mixture and mix well. (*Optional: Add, raisins, nuts or chocolate morsels.)
Beat the egg whites until stiff. Fold into the cheese mixture.
Make the graham cracker crust and pat into the bottom of a spring form pan. Pour cheese mixture over the crust.
Arrange the fresh fruit on top or cheesecake. Place cheesecake in refrigerator. Mix the red Jell-O according to package directions. Refrigerate until slightly thick. Pour thickened Jell-O over the fruit topped cheesecake.
Keep refrigerated.
