1 large or 2 small bunches fresh spinach
1 head butter lettuce
3/4 lb. swiss cheese, grated
1 lb. bacon, cooked and crumbled
3/4 lb. mushrooms, sliced
1 red onion, sliced (to taste)

Dressing:
1 1/2 T. poppy seeds
3/4 c. white vinegar
1 1/2 c. oil
1 1/2 T. grated onion
3/4 c. sugar
1 1/2 tsp. salt
3/4 tsp. dry mustard

Directions:
Directions:
Combine all salad ingredients and toss with desired amount of dressing. To prepare dressing whisk together the sugar, dry mustard, and salt in a glass jar or tupperware. Add all remaining dressing ingredients and combine well. Dressing is best when made at least 2 hours before serving and refrigerated to let flavors develop.
