3 eggs
¼ cup butter, softened
1 teaspoon vanilla
1 ½ tablespoons sugar
1 large can sweet potatoes
(drained and mashed)
2/3 cup pecans
1 can coconut

Topping:
1 cup firmly packed brown sugar
½ cup butter, melted
½ cup pecans

Directions:
Directions:
Cream together the eggs and butter. Stir in vanilla, sugar, potatoes, pecans and coconut and spoon into buttered 9x13 casserole dish. Combine topping ingredients and sprinkle over the potato mixture. Bake at 350 until bubbly. Simple and delicious!
