Cookies:

1 Cup Butter
2/3 Cup sugar
1 Egg
2 1/2 Cups Flour
1/2 tsp. Salt
1 tsp. lemon extract

Buttercream Frosting:

1/2 cup crisco
1/2 cup butter, softened
1 tsp. vanilla
4 cups (1 lb.) powdered sugar
2 Tbls. milk

Directions:
Directions:
Cream together the butter and sugar. Beat in egg. Add the flour, salt, and lemon extract. Beat.
Recipe says to chill for 3-4 hours but I usually don't do this.
Bake @ 350º for 8-10 minutes.

Frosting:
Cream butter and shortening with electric mixer. Add vanilla. Gradually add sugar, one cup at a time beating well on medium speed. Scrape sides and bottom of bowl often. When all sugar has been mixed in, icing will appear dry. Add milk and beat at medium speed until light and fluffy.
