6 cups sugar
1 2/3 cups cider vinegar
1 teaspoon red food coloring
4 sticks whole cinnamon (each 2 inches long)
2 teaspoons whole cloves
about 4 pounds, firm-ripe Golden Delicious Apples, peeled and
cored

Directions:
Directions:
Prepare 4 pint-sized canning jars, following process
directions. In a 5-quart or larger pan, combine sugar, vinegar,
food coloring, cinnamon, and cloves. Bring to a boil and
simmer, uncovered, for 10 minutes. Slice the apples
crosswise into about 1/3 inch thick rings. Add about half of
the rings to the simmering syrup and cook, turning rings occasionally, until apples are barely tender when pierced and
just beginning to turn translucent around the edges (6-8
minutes). Proceed with the canning process and fill jars to
within 1/2 inch of rim. Then simmer remaining apples and fill
remaining two jars.
