Baked Sweet Potatoes Recipe

8 Med Sweet Potatoes with skin
1 C Milk, whole
1 t Vanilla
3 T Sugar, brown
1/4 C Butter
1/4 t Cinnamon,
1/8 t Nutmeg
1 T Orange juice
4 C Marshmallows, small

Directions:
Directions:
Heat oven to 350ºF. Bake potatoes until knife-tender, 1 1/2 hours. Leave oven on.

Let potatoes cool slightlly. Peel, place in bowl. beat until smooth.

Heat milk in small saucepan to boiling but do not boil.

Add vanilla, sugar and butter.

Stir in cinnamon, nutmeg and orange juice into potatoes.

Stir in milk mixture until smooth.

Coat 12x8x2" baking dish with cooking spray.

Spread potatoes into dish. Bake for 30 minutes.

Spread marshmallows over top and cook another 20 minutes or until nicely browned.
