Chocolate Mint Cookie Sandwiches Recipe

1 cup butter, softened
1 cup sugar
1/2 cup packed brown sugar
2/3 unsweetened cocoa powder or unsweetened cocoa powder
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
3 eggs
2 teaspoons vanilla
2 cups flour
Chocolate Glaze (chocolate frosting)
Creme de Menthe Filling (powdered sugar, creme de menthe flavoring, butter, 1 tablespoon milk)

In a large bowl, beat butter with an electric mixer for 30 seconds. Add sugar, brown sugar, cocoa powder, baking powder and soda. Beat until combined, scraping sides of bowl. Add eggs and vanilla to sugar mixture; beat until combined. Beat in as much of the flour as you can with the mixer. Stir in remaining flour with a spoon. Cover and chill dough for 2-24 hours, or until easy to handle. Roll into 1 1/2 inch balls and place 3 inches apart on ungreased cookie sheets, or for smaller cookies, roll into 3/4 inch balls. Bake at 375 for 8-10 minutes, or until set. Cool. Frost tops on half of the cookies with chocolate glaze. Place cookies, chocolate sides up on a rack. Let stand for 30 minutes. Spread the bottoms of remaining plain cookies with the Creme de Menthe Filling. Top with chocolate coated cookies, chocolate sides up. Gently press the cookie to spread the filling into an even layer. Wrap in plastic wrap, chill for 2 hours.
