9 oz can crushed pineapple
1/4 c soft butter or liquid shortening
1/2 c brown sugar
2 c sifted flour
1 c sugar
3 t baking powder
1 t salt
1/3 c soft shortening
1 egg
1 c milk
1 t vanilla

Directions:
Directions:
Heat oven to 350. Grease a square pan 9x9. Mix undrained pineapple, butter, brown sugar and apread in bottom of pan. Sift flour, sugar baking powder and salt in bowl.
Add shortening, egg, milk, vanilla. Beat 2 minutes. Scrape sides and bottom of bowl constantly. Pour over fruit in pan. Bake 45 to 50 minutes. Turn cake upside-down immediately on serving plate to prevent sticking. leave pan over cake for a minute. Top with whipped cream. Will make
18 big cup cakes - pour 3/4 full.
