4 tbsp. butter
1 cup water
1 cup cottage cheese
1/2 cup honey
3 cups white flour
2 cups whole wheat flour
2 pkg. yeast
2 tsp. salt
2 eggs
1/2 cup regular rolled oats
2/3 cups chopped walnuts

Directions:
Directions:
In a saucepan, heat cottage cheese, butter, honey and water until very warm.
In a bowl, mix together the white flour, yeast, eggs and salt.

Add this mixture and eggs to white flour. Add whole wheat flour and nuts. If the mixture is too soft, add more white flour. Knead until smooth and elastic (10-20 minutes). Let rise until double. Punch down and place in 2 loaf pans. Let rise about one hour. Bake at 350 degrees for about 40 minutes.

If you use Fleischman's fast acting yeast, the preparation time is much less.
A healthy, hefty, nutty bread. Never fails.
