1 cup rice
2 cups water
1 lb. ground pork or beef
1 medium onion, diced
1 bundle scallions, finely chopped
2 eggs
Salt and pepper, to taste
Soy sauce

Directions:
Directions:
Cook rice and water in microwave for 20 minutes, stirring every 5 minutes.
Scramble the 2 eggs and cook until done.
Cook ground meat and onions. Season to taste with salt and pepper.
Mix rice, scallions, and meat mixture in pan - heat to desired temperature.
Serve with soy sauce.
