1/2 large onion, diced
2 1/2 tablespoons butter
Salt and Pepper to taste
1/2 cup plus 1/3 cup flour
1/2 gallon chicken stock
2 1/2 cups warm milk
1/2 pound cheddar cheese, grated
2-3 oz. pepper jack cheese, grated
salad croutons, grated Parmesan for optional garnish

Directions:
Directions:
In a large kettle, saute onion in butter over low heat until
tender. Add salt and pepper. Stir in flour and cook until it
turns a light golden brown. Add stock slowly while cooking
over low heat and cook until well mixed. Add milk and return
to temperature of 160º.
Add cheddar and jack cheeses and stir until completely
melted and soup is heated through. Stir constantly as cheese
has tendency to stick to bottom of pan. Soup should have
consistency of light cream soup. Garnish with croutons and
parmesan cheese, if desired.

Makes 10 servings.
