2 Chicken breasts, skinned/boneless
2 T Oil
1 C Carrots, diced
1 C Green beans
1 C Celery, diced
1 C Chicken broth
4 T Water

Directions:
Directions:
Rinse and pat dry Chicken.

Heat oil in large skillet and brown chicken on all sides; set aside.

Add carrots, green beans and celery to skillet stir fry for 2 minutes. Remove from skillet.

Add chicken broth and chicken to the skillet; bring to boil. Cover and reduce heat to simmer for 20 minutes.

Remove chicken form skillet and keep warm.

Whisk cornstarch into water to dissolve. Pour into broth, cook over medium heat stirring constatnly until thickened.

Add vegtables and heat through. Serve over chicken.

This is good over rice!
