1&1/2 c flour
1/2 c oil
1 c. sugar
1&1/2 tsp baking soda
1/4 tsp salt
1 scant cup soy/ricemilk/water/milk (water works fine)

Directions:
Directions:
Bake at 375 for 30 min.
Variation:
--Sweet & Light lemon: replace 1/4 to 1/2 c of water/milk with
lemon juice (for a double or triple recipe)
--Orange: add 2 CJ OJ instead of water & cut back sugar
(for a double recipe)
--Torte: slice 1 or 2 apples & lay them on top, sprinkle with
cinnamon &/or sugar to taste
(Plums work well/cut them half: about 10 for double or triple
recipe)

I have tried the orange version and it is very good! I found it
when looking for cakes we could share with Erin before she had
