1 yellow onion
1 head of garlic
2-3 jalapeños
1 can of sweet corn
1 large can of black beans
1 tsp. of cumin
1 tsp. chili powder
Salt & pepper (to taste)
Shredded Monterrey Jack cheese
Loaf of Ciabatta or French bread

Directions:
Directions:
Remove seeds from jalapeños. Dice onion, jalapeños and
garlic. Saute these three vegetables until they are soft. Then,
add the can of sweet corn and black beans. While it's
cooking, mash the beans until they appear thick like refried
beans. Stir at a lower heat and let it simmer for 15-20
minutes. Season with 1 tsp. of cumin, 1 tsp. of chili powder
and salt/pepper to taste. Cut bread loaf lengthwise and evenly
distribute the cooked vegetable topping. Put a generous
portion of the shredded Monterrey Jack cheese on top. Bake
for 15 minutes at 400º. Enjoy!
