1 lb. macaroni (Ziti #2 no lines or pastitsio #2 found in Greek or Italian stores)
1 1/2 lbs. hamburger
1 medium onion, finely chopped
4 T. butter
salt and pepper
dash of cinnamon
2 tsp. tomato paste
1/2 c. chicken broth
2 T. bread crumbs
1/2 lb. grated Pecorino Romano Cheese or Mezethra (Greeek Cheese)
Béchamel Sauce:
12 T. butter
3/4 c. flour
8 eggs
1 1/2 qt. milk

Directions:
Saute onion in butter until golden brown. Add hamburger and cook until meat is brown, stirring constantly. Add salt, pepper, and cinnamon. Add tomato paste and half cup of chicken broth. Cook 15 minutes. Add bread crumbs. Boil macaroni in salted water per package directions.
Béchamel Sauce:
Melt butter in large pot. Add flour and milk. Cook until thickened, stirring constantly and remove from fire, Beat eggs. Add cream slowly to eggs, stirring constantly.
Now butter 10x1233in. pan. Put half of the cooked macaroni in pan orderly. Sprinkle 1/3 of grated cheese over it. Pour half of Béchamel sauce evenly over macaroni and cheese. Spread hamburger mixture over entire pan. Add remaining macaroni evenly, sprinkle another 1/3 grated cheese and then pour on the remaining Béchamel sauce. Sprinkle the remaining grated cheese on top of all. Bake in a preheated oven at 375ºfor 1 hour.
