Directions:
Directions:
boil ham hock or other ham seasoning piece til very tender, falling off the bone tender. remove from pot. bring stock to boil add large cut green leaves of collards and cook until half done. add remaining lighter cut leaves and let cook with lid on until tender. pour into colander and let drain. put in pan and cut real fine. test for salt flavor.
