1 pkg. Uncle Ben's long grain and wild rice mix
1/4 C butter
1/3 C chopped onion
1/3 C flour
1 tsp. salt, dash black pepper
1 C half and half, 1 C chicken broth
2 C cooked chicken (cubed)
1/3 C chopped pimento
1/3 C chopped fresh parsley, 1/4 C chopped almonds.

Prepare contents of rice and seasoning packets according to pkg. directions.

Meanwhile, melt butter in large saucepan.

Add onion and cook over low heat until tender. Stir in flour, salt and pepper.

Gradually stir in half and half and chicken broth.

Cook, stirring constantly, until thickened.

Stir in cubed chicken, pimento, parsley, almonds and cooked rice. Place in 2 quart casserole dish.

Bake uncovered in 375 degree over for 30 to 40 minutes till bubbly.
